Pan-seared cauliflower is easy and quick with a flavour kick from rich and herby pesto.


AP Basil Pesto

1 large cauliflower

Olive Oil

Sea Salt & Black Pepper


  1. Cut off the stalks and cut quarter cauliflower into large florets. Blanch in pan of boiling salted water over a medium heat for 3 minutes. Drain and cool.

  2. Rub in sea salt and black pepper, drizzle with a olive oil.

  3. Preheat a griddle pan over a high heat.

  4. Char for a few minutes until browning and slightly charred.

  5. To serve, divide between plates and top with a drizzle of pesto.
