Truffles and clean-eating don't usually mix, but you can have it all with these delicious little balls that are a joy to make and eat.


INGREDIENTS


UKF Lemon & Lavender Fauxmage


AP Coconut Kefir


Pistachios


Optional: Cocoa



DIRECTIONS


1. In a food processor whip 2 tablespoons of kefir and with 1 cheese until smooth.


2. Scoop the mixture into a bowl and place in the fridge for at least 1 hour or overnight.

3. Chop the pistachios finely and shape cheese mixture into small bite-size- balls. Roll each in chopped pistachios.

(Optional: roll each pistachio ball in cocoa.)

4. Serve as sweet canapes or petit fours after dinner.
