Elderflower, lime, mint, and ginger switch up humble grilled or roast veg into a gourmet starter, side or even main dish.


INGREDIENTS


AP Elderflower & Lime Cordial


1/4 cup Olive Oil

6 Fresh Mint Leaves, chopped finely

Half inch Fresh Ginger, grated

Himalayan Pink Salt or Sea Salt


Ground Black Pepper

DIRECTIONS

1.Whisk half a bottle of cordial together with the rest of the ingredients in a small bowl, and brush over vegetables, coating well.


2. Leave to marinate for a least 4 hours, preferably overnight.


2. Grill or roast and serve with an accompanying sauce (see Sauces section) as a starter, side or main.


You can also try dipping veg into a light tempura batter before cooking.


This marinade can also be used for meat lovers to coat BBQ and roast dishes.
